Designed by the renowned Atelier Zébulon Perron, the decor of Le Boulevardier restaurant and bar echoes the design of the hotel with a style that’s at once vintage and contemporary.

David Pellizzari

Executive Chef

He has worked in kitchens since the 1990s. He honed his talent in Ontario and Vancouver and eventually adopted Montreal as his home behind the stoves of Brasserie Le Réservoir under the direction of Chef Dany Bolduc. Next, he became the chef at Buvette Chez Simone, also in Montreal, where he cooked up the idea of opening his restaurant: Lili.Co. From 2013 to 2018, David was the darling of the culinary media and won Eater Magazine’s Best New Restaurant in his first year. David and Lili.Co were part of the prestigious Visa Infinite Dining Series alongside Normand Laprise (Toqué!), Charles-Antoine Crête (Montréal Plaza), and Derek Dammann (Maison Publique). David’s creativity has led to his recipes being published in the cookbook Cuisine de mon enfance and the guide Where Chefs Eat. When Lili.Co closed its doors in 2018 it was described as the saddest event of the year for Montreal’s culinary scene. Fans of the talented chef can now reconnect with his creations at Le Boulevardier restaurant in Le Germain Hotel Montreal, where David will serve delicious cuisine inspired by French brasseries.

Il a la gestion dans le sang et met depuis plus de 15 ans son flair au profit du secteur de la restauration. Au cours de sa carrière, il a assumé plusieurs rôles, tantôt comme directeur général d’établissements réputés, notamment en Ontario, tantôt comme consultant pour divers acteurs de l’industrie. Avant de devenir opérateur et partenaire du restaurant Le Boulevardier, à l’Hôtel Le Germain Montréal, Bruno occupait le poste de directeur national de la restauration pour Germain Hôtels. À ce titre, il travaillait à la croissance et à l’harmonisation des offres de restauration de l’hôtelier ainsi qu’à l’optimisation des standards. Épicurien de nature, Bruno est extrêmement sensible à la qualité, autant dans l’assiette que dans ses pratiques de gestion. Invités et convives sont les grands gagnants de cette quête vers l’excellence puisque Bruno ne cesse de surpasser leurs attentes.

Charles Baudelaire named these passionate observers of the world “flâneurs”: the French term used to describe those individuals who lounge, wander or stroll at their leisure. Therefore it should come as no surprise that the bar at Le Germain Hotel Montreal is named “Flâneur”. Nor is it a coincidence that it’s located in the hotel lobby, where any flâneur may cross its path and give in to their desire to repose.
